Elderberry flower juice recipe

Ingredients
- 40 elderberry flowers, picked the same day
- Approx 2 kg of sugar, maybe a bit less
- 2 lemons
- 20-25g of citric acid
- 2 liters of water
Procedure
Rinse the lemons and slice them thinly. Rinse the elderberry flowers and remove any non-flowery parts, you can leave most of the stems.
Fill a pan with water and add the sugar. Bring the water to a boil and wait until the sugar has dissolved into the water. Turn off the heat, and remove the pot from the hot stove. Put in the flowers, lemon slices, and citric acid. Stir everything a bit, put on the lid and leave until cool. Once the mix has cooled off put it in the refrigerator for 3 to 4 days. Stir the juice at least once per day.
Use a fine sifter to filter the juice and get rid of the flowers, lemons and other random junk. Fill bottles or jars with the juice. Put those that you're not drinking now in the freezer.
